This is not a commercial coffee tour, it is an educational experience to create awareness in the only organic specialty coffee plantation in the Monteverde area, located in the Ecological Sanctuary, a 48 hectares family project focused on conservation, sustainability, agroecology, education and culture. In a guided workshop by an expert where you will learn from the basics of ancestral agriculture, how we create our own organic fertilizers, then you will know the coffee gardens planted in the forest that surrounds the Ecological Sanctuary, the drying area, and the process that involves the specialty coffee (history, plantations, growth, development, varieties and the science of flavor to prepare a good coffee). After leaving the forest, we will enjoy a guided coffee tasting, sharpening the senses to recognize defects, attributes, aromas and flavors in different qualities of coffee. Finally, we will create an interactive demonstration of the science of flavor and all the variables that an alchemist applies in the preparation of a coffee using different infusion methods. This workshop is an experience that will expand your knowledge of the world of coffee and help you become a home barista and an informed consumer. Welcome to my home! First I will explain you how the Costa Rican diet has impacted the longevity and health of locals. Then you will learn why I chose the specific ingredients for the 6 traditional dishes that we will cook: - Empanadas - Arroz con Pollo (perfumed rice with chicken) - Gallo Pinto (traditional rice and beans) - Tortillas con Queso (handmade tortillas with local cheese) - Picadillo de Papa (potatoes in chunks with ground beef) - Fried Yuca I will demonstrate, oversee and guide the class so that you are the one who is cooking. My goal is that you can replicate the recipes when you return back home. One of the highlights that guests love the most is that you will keep plenty of yummy leftovers, so your experience remains for the following day. I recommend you booking days before departing CR. These recipes have been transmitted generation after generation. I learned them from my mother and they will be handed to you. I will explain to you on what occasions we normally cook them, what are the secrets for the best taste and stories behind these dishes. Making tortillas and empanadas are perfect activities for children, they love playing with corn dough, I do that with my little grandson Samuel when he visits me. Go birdwatching with a licensed guide
Monteverde in Costa Rica is one of the best destinations for Birdwatching around different birds habitats. I was raised in Monteverde where I have been living all my life listening all the different bird calls all the time, that I can recognize 99% of them. My 31 years experience made me very exigent to use different birdwatching places, depending the season or weather conditions to see as many birds as possible. We'll start birdwatching at 6:00 AM, where we'll see about 30 different species of birds at an elevation of about 4,500 feet above sea level. Then we'll stop at the cafeteria for a quick Costa Rican coffee. After that, we'll move up to Curicancha Reserve where we'll walk through two different life zones including different types of forests (secondary, transitional and primary) plus open areas where we'll be able to see much more variety of birds or Santa Elena Cloud Forest Reserve to be at a different elevation—about 5,000 feet above sea level—where we'll see much more interesting birds, including the resplendent quetzal, guans, barbets, three-wattled bellbirds, tinamous, and so many others. Is good to know that if you repeat the tour, you must see other birds you didn't see the day before.. Typically we would see 60 to 70 different types of birds. Other things to note Bring binoculars, a bird book, hiking shoes, insect repellent, rain gear, and a hat.

Mountain Biking in Paradise
We will meet in Montezuma's charming "downtown" for a bike fitting and safety check. We provide the mountain bikes, helmets, and snacks. We'll briefly chat about your past riding experience and abilities, and then gently roll out together on our most popular signature route, called "Easy Cruiser". Guests are required to have some cycling experience, but basic techniques (braking, etc) can be reviewed. This coastal route is a super scenic, relatively flat two-hour spin (200 feet of elevation change), and can be done at a very relaxed pace if you like. We will occasionally stop at select "off the tourist track" points of interest, and possibly take a quick plunge in the crystal blue "Rio Lajas". Also, we may be able ride to Cabuya Island on an amazing land bridge (tide dependent). As we circle back to Montezuma, there will be an opportunity to take an optional refreshing dip in a beautiful, hidden waterfall. Other things to note. We recommend drinking extra water prior to the ride so you are well hydrated. Also, please let us know if you have any relevant health issues. If you have your own bicycling shoes with cleats, please specify which type and we may have the pedals to match. We will bring tools for bike fitting.

Sail with us on Brisa Elegante, a 100' wooden sail ship. This is a shared family cruise for up to 46 guests in a calm and relaxing environment. We leave Marina Pez Vela to start the cruise past Parque Nahomi, setting sails, and following the coastline along Manuel Antonio beach with an extraordinary view of the untouched National Park rainforest (2 hours). We anchor near Playa Biesanz for swimming, snorkeling, and jumping into the water (1 hour). Enjoy the sea, coastline, and wildlife views while sitting in our comfortable chairs or lying on our lounge beds.
